Preacher Cookies Recipe: NO-BAKE CHOCOLATE DELIGHTS!

They're called preacher cookies because when the preacher would stop by your house unannounced, you could quickly whip up a tasty snack for him using ingredients already in the pantry! These no-bake chocolate peanut butter oat gems were a staple for us at school bake sales in 1980s Virginia. They really are easy to make and their unique flavor and texture will leave a lasting impression on hungry houseguests.

1 stick (8 tablespoons) salted butter
2 cups sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla extract
3 cups old-fashioned rolled oats

Line two baking sheets with parchment or wax paper.

In your favorite pot over medium heat, bring the butter, sugar, cocoa and milk to a full boil. Boil for an additional 1 and a half minutes then immediately remove from the heat. Stir in peanut butter and vanilla then add the oats. Stir well to combine.

Drop tablespoonfuls of the mixture onto the prepared baking sheets and let sit at room temperature for about 30 minutes until cooled and hardened.

Store in the refrigerator for up to 3 days. These cookies taste better the longer they sit. Avoid making them on rainy or humid days because the cookies won't set up as well. Enjoy!
