Blueberry/Blackberry Buckle: BEST SUMMER DESSERT RECIPE!


Blueberry buckle is one of our favorite go-to recipes for a quick, delicious and impressive dessert. Your loved ones will have their tongues-a-waggin' when you dish this sweet ambrosia alongside some silky whipped cream or cold vanilla ice cream. Substitute blueberries for blackberries or raspberries for equally delightful results!

INGREDIENTS:
1 stick salted butter (plus more for buttering)
1-1/4 cup sugar (plus more for sprinkling)
1 cup self-rising flour
1 cup milk
2 heaping cups fresh blueberries

Rinse and pat dry the berries.

Butter an 8" X 8" baking dish.

Melt the stick of butter in a microwavable dish.

Combine 1 cup of the sugar and the self-rising flour in a mixing bowl. Whisk in milk until smooth. Pour in melted butter and whisk until smooth and glossy.

Pour the batter into the buttered baking dish. Sprinkle berries over the top of the batter; distributing evenly. Sprinkle ¼ cup sugar over the top.

Bake in the oven at 350 degrees for 60-70 minutes, or until golden and bubbly. Sprinkle an additional teaspoon of sugar over the buckle 10 minutes before it’s done.
